Indian Cooking Recipe : Okra And Eggplant Masial

 

Ingredients : 1 pound okra 1 eggplant medium sized ½ cup toovar dal 4 red chillies 4 green chillies ½ tsp imli paste ½ tsp sambhar powder ¼ tsp mustard A small pinch hing ¼ tsp haldi 1 tsp salt to taste 2 tsp cooking oil 2 A few curry leaves A small bunch cilantro, finely chopped


 

Method : Cook toovar dal with 2 cup of water and keep it aside. Chop okra and eggplant finely. Heat some oil and put the mustard in it. When they crackle, put hing, red chillies, green chillies, curry leaves and vegetables and fry it for a few minutes. Put imli paste, salt, haldi, and 2 cups of water to this, and allow it to cook for sometime. Now put sambhar powder to this, and let it cook for a few more minutes. Lastly, put toovar dal and cook for a few minutes. Garnish with chopped cilantro.


 


Indian Cooking Recipe : Okra Curry

 

Ingredients : 250 gms okra, washed, diced and dried ½ tsp urad dal ¼ tsp mustard A small pinch hing A small pinch turmeric ½ tsp chill powder 1 tsp yogurt 3 tsp cooking oil ½ tsp salt


 

Method : Heat some oil and put the mustard. When they crackle, put urad dal, hing, turmeric, and add the diced okra. Add salt and mix it well. Let it to cook for 10-15 minutes. Now put chilli powder and 1 tsp yogurt and keep frying for 5 to 10 minutes.


Indian Cooking Recipe : Olan

 

Ingredients : ½ kg ash gourd 1 cup cow peas 2 tsp jeera 12 green chillies 2 cups coconut gratings ½ tsp mustard seeds 2 sprigs curry leaves 4 tsp oil 1-2 onions A little asafoetida Salt to taste


 

Method : Chop the ashguard into medium sized pieces. Pressure cook ash gourd with cow peas in sufficient water, upto the sound of one whistle. Remove. Put salt, green chillies and chopped onion. Allow it to boil for 5 minutes. Extract 2 cups of thick juice by grinding coconut gratings. Combine with the above and allow to boil for 5 minutes. Take out from flame. Season with mustard, jeera and curry leaves in oil. Put a few drops of asafoetida water and cover vessel.


 


Indian Cooking Recipe : Onion Kolambu

 

Ingredients : 1 big onion,chopped 2 tomatoes 3 tbsp oil tamarind lump (lime size) 2 cups water 2 red chillies 2 green chillies ¼ tsp haldi powder curry leaves ½ tsp mustard seeds 1 tsp chana or black gram dal 1 tsp sambar powder 1 tsp coriander powder a little asafoetida 1 tbsp sugar 1 tsp salt


 

Method : Soak tamarind in hot water. Extract juice by squeezing several times and make 2 cups of jucie strain. Add sambar powder, coriander and salt in the juice. Heat oil in frying pan and put mustard. When it crackles add dal. When it is half cooked, add red chillies. When dal turns golden brown, add chopped onion, haldi and asafoetida. Roast for a while. When onion turns transparent, put tomato pieces, chopped curry leaves and green chillies. Roast for another few minutes and add tamarind juice. Boil for 5 minutes. Finally, add sugar. Remove from flame.


Indian Cooking Recipe : Onion Sambhar

 

Ingredients : 1 cup toovar dal 3 tsp Dhania 2 tsp channa dal 6 red chillies ¼ tsp methi 2 small onion, chopped 1 tomato 2 tsp imli paste 3 tsp grated coconut 4 green chillies ¼ tsp haldi a small bunch cilantro, finely chopped a few curry leaves ½ tsp mustard 2 tsp cooking oil salt to taste


 

Method : Cook toovar dal and haldi with extra water and separate the two. Keep aside. Sauté channa dal, red chillies, dhania, methi, and little onion. Grind this mixture with tomato and coconut. Sauté onions and green chillies in a pan for a few minutes and cook this in the toovar dal water with salt. After it is cooked, put imli paste and cook for a few minutes Lasty, put the masala. After this is cooked add the cooked toovar dal. Heat little oil in a pan, splutter mustard and add this to the sambhar. Garnish with cilantro and curry leaves.


Indian Cooking Recipe : Ordinary Rasam

 

Ingredients : ¼ cup toovar dal 2 cups water ¼ tsp imli paste 2-3 tomatoes 1 tsp rasam powder a small bunch cilantro, finely chopped a small pinch hing ¼ tsp haldi ¼ tsp cumin powder ¼ tsp pepper powder ½ tsp lemon juice ½ tsp ghee 1 tsp salt to taste


 

Method : Cook toovar dal with 2 cups of water and keep it aside. Boil tomatoes in 1to 2 cups of water, then put imli paste, hing, salt, and haldi. After tomatoes are cooked, put rasam powder, and allow it to boil for 5 minutes. Now put toovar dal and let it cook for a few more minutes. Heat some ghee and put the mustard in it. When the crackle, add pepper powder and cumin powder to this before mixing this with the rasam. Garnish with chopped cilantro.


Indian Cooking Recipe : Parupu Orundai Kozambhu

 

Ingredients : 1 cup toovar dal 4 tsp channa dal 12 red chillies imli water 2 tsp cooking oil 1 tsp pepper 1 tsp cumin seeds ¾ tsp methi ¼ tsp haldi a small pinch hing 1 tsp salt to taste


 

Method : Soak toovar dal and channa dal in water for 2 hours. Soak 6 red chillies, 1 tsp salt, and hing in some water. Grind the above two into a thick paste. Put pepper, cumin seeds, and curry leaves to this. Fry methi, 6 red chillies, and hing in little oil, and wet grind the above mixture. Boil enough water with imli paste, salt and haldi so that you can add the balls made out of toovar dal paste. Put the methi mixture paste and boil this until the flavour comes out. Make small balls out the toovar dal paste and add this to the boiling sambhar. Cook for a few minutes and garnish with curry leaves.


Indian Cooking Recipe : Parupu Rasam

 

Ingredients : 1 cup toovar dal 2 red chillies 1.5 tsp coriander seeds ¼ tsp cumin seeds ½ tsp peppercorns a small pinch hing ¼ tsp mustard a small pinch methi seeds 1 clove a small piece cinnamon stick ¾ tsp imli paste ¼ tsp haldi a few curry leaves 1 tsp ghee 1½ tsp oil 1 tsp salt


 

Method : Cook toovar dal with haldi, with 2 cups of water. Fry red chillies, coriander seeds, cumin seeds, 1 tsp toovar dal, hing, a pinch of mustard, cloves, cinnamon stick, and methi in oil. Wet grind the above mixture and keep aside. Keep 3 cups of water to boil, put imli paste, haldi, and salt, and let this boil for a few minutes. Now put the ground masala and allow it to boil for 5 to10 minutes, till the flavour comes out. Add the cooked toovar dal, and let it boil for 5 to10 minutes. Heat some ghee, splutter mustard, then add a small pinch of cumin seeds, and curry leaves and add this to the rasam.


Indian Cooking Recipe : Parupu Usili

 

Ingredients : ¼ cup toovar dal ¼ cup channa dal 4 red chillies A small pinch hing 1 tsp urad dal ¼ tsp mustard A few curry leaves 1 tsp salt to taste Vegetables - beans and cabbage, chopped 5 tsp cooking oil


 

Method : Dry grind toovar dal, channa dal, and red chillies coarsely. Cut vegetable finely and boil this with little salt. Allow ½ cup of water to boil, put salt, and mix the dal mixture with this water. Cook in a pressure cooker. Heat some oil in a pan and put the mustard. When they crackle, put urad dal, hing, and curry leaves in oil, and add the dal mixture to this. Keep stirring until the dal becomes slightly dry. Now add the cooked vegetable and continue to stir until all the ingredients get mixed well.


Indian Cooking Recipe : Pepper Rasam

 

Ingredients : 2 tsp toovar dal ¾ tsp cumin seeds ½ tsp pepper 3 red chilli ½ tsp imli paste ¼ tsp haldi a few curry leaves 3 cups water ½ tsp ghee 1 tsp cooking oil 1 tsp salt to taste


 

Method : Fry toovar dal, ½ tsp cumin seeds, pepper, red chilli, and curry leaves in oil. Wet grind the above mixture. Keep 3 cups of water to boil, and add imli paste, salt, and haldi. Allow this to boil for a few minutes, and then add the ground masala. Sauté ¼ tsp cumin seeds, and 1 red chilli in ghee and add this to the rasam.


Indian Cooking Recipe : Pitla

 

Ingredients : 1 cup toovar dal 2 tsp urad dal 2 tsp dhania ¼ tsp pepper ¼ cut coconut ¼ tsp mustard ¼ tsp turmeric 1 tsp gud 2 tsp tamarind paste a small pinch hing 1 tsp salt to taste 4 bittergourd, chopped ½ cup channa a few curry leaves


 

Method : Soak channa over night and keep them aside. Cook toovar dal and turmeric with extra water and separate the two, and keep them aside. Sauté urad dal, dhania, red chilles, and pepper. Wet grind this mixture with coconut. Sauté bittergourd, green chilles, curry leaves, turmeric, and salt in little oil. Add channa, gud, tamarind paste, and toovar dal water to this and allow it to cook. Now put the ground mixture, toovar dal and cook until the flavour comes out.


Indian Cooking Recipe : Plaintain Curry

 

Ingredients : 2 to 3 washed plantain, peeled and diced ½ tsp cumin seeds ¼ cup grated coconut 2-3 red chillies ½ tsp urad dal ¼ tsp mustard a small pinch hing ¼ tsp turmeric a few curry leaves 3 tsp cooking oil ½ tsp salt


 

Method : Boil plantains with turmeric and salt. Wet grind cumin seeds, coconut and red chillies and keep aside. Heat 3 tsp of oil in a pan and put mustard. When they crackle, then add hing, urad dal, curry leaves, turmeric, and the diced plantain. Sprinkle water and allow it to cook for 5 minutes. Now, put the ground masala, and allow it to cook for another 5 to 10 minutes.


Indian Cooking Recipe : Plaintain Podimas

 

Ingredients : 2 to 3 plantain ¼ tsp turmeric a small pinch hing 6 green chillies a small piece ginger, grated ½ tsp urad dal 1 tsp channa dal ¼ tsp mustard curry leaves a small bunch of cilantro, finely chopped 1 lemon 2 tsp cooking oil 1 tsp salt to taste


 

Method : Boil plantains with turmeric and salt. Peel skin and grate them and keep it aside. Heat 2 tsp oil in a pan and put the mustard. When they crackle, put urad dal, channa dal, hing, turmeric, curry leaves, red chillies, ginger, lemon juice and salt and then add the grated plantains. Allow it to cook for a few minutes and then garnish with cilantro.


Indian Cooking Recipe : Plantain Puli Curry

 

Ingredients : 2 to 3 washed plantain, peeled, and diced ½ tsp urad dal ¼ tsp mustard a small pinch hing ¼ tsp turmeric ¼ tsp tamarind paste 2 red chilli 1 tsp curry powder A few curry leaves 3 to 4 tsp oil 1 tsp salt


 

Method : Heat 1 tsp of oil in a pan and put the mustard. When they crackle, put hing, urad dal, curry leaves, turmeric, red chilli and diced plantain. Sprinkle water and allow it to cook for 10 minutes. Now put salt, curry powder and mix it well. Add little water to tamarind paste and sprinkle this on the plantain curry. Allow it to cook for a few more minutes.


Indian Cooking Recipe : Podalangai (Snakegaurd) Paal Kootu

 

Ingredients : Podalangai, chopped ½ cup toovar dal a small pinch turmeric powder 1 tsp cumin seeds 2 red chillies 2 green chillies ½ cup milk ¼ cup grated coconut ¼ tsp mustard ¼ tsp urad dal 1 tsp salt to taste 1 tsp ghee


 

Method : Cook toovar dal with 2 cups of water and keep aside. Cook vegetable and put the cooked dal, turmeric powder, and salt and allow it to boil for a few minutes. Wet grind coconut, red chillies, green chiliies and cumin seeds with milk. Add this to the boiling vegetable and allow it to cook for 10 more minutes. Heat some ghee in a pan and put the mustard When they crackle, put urad dal, and hing, and add it to the above.


Indian Cooking Recipe : Poritha Rasam

 

Ingredients : ½ cup toovar dal 1 tsp urad dal ½ tsp channa dal ½ tsp pepper ¼ tsp cumin seeds 1 red chilli a small pinch hing ¼ tsp haldi 2 to 3 tomatoes, chopped a few curry leaves ½ tsp ghee ¾ tsp salt


 

Method : Cook toovar dal with haldi, with 2 cups of water. Fry urad dal, channa dal, pepper and red chilli in little oil. Wet grind the above with cumin seeds. Combine the masala with the cooked toovar dal and allow it to boil for sometime. Heat some ghee and put the mustard in it. When they crackle, put hing, and curry leaves and add this to the rasam.


Indian Cooking Recipe : Potato Curry

 

Ingredients : 1 pound potatoes ¼ tsp turmeric a small pinch hing 1tsp chilli powder ½ tsp urad dal ¼ tsp mustard 3 tsp cooking oil 1 tsp salt to taste


 

Method : Dice potatoes with skin. Heat oil in a pan and put the mustard. When they crackle, add urad dal, hing, turmeric and the diced potatoes. Allow it to simmer and add salt and allow it to cook until the potatoes turn light brown.


 


Indian Cooking Recipe : Potato Fried Upkari

 

Ingredients : 6 potatoes 3 red chillies 2 pinches mustard seeds 8 tbsp oil Salt to taste


 

Method : Chop potato into thin slices of square or triangular shape. Apply salt and leave aside for 5 minutes. Prepare seasoning in frying pan with red chilli pieces and mustard in oil. Squeeze out water from slices and drop in pan. Turn over. Cook under cover for 2-3 minutes. Keep on turning occasionally and cook until it becomes brown. Take out from flame.


Indian Cooking Recipe : Potato Masiyal

 

Ingredients : 1 cups toovar dal 2 potatoes 2 tomatoes 2 tbsp oil 1" piece ginger (minced) 2-3 green chillies a little asafoetida 1 sprig curry leaves a little haldi powder 2 red chillies ½ tsp mustard seeds 1 tsp chana dal 1 tbsp lemon juice A few coriander leaves 1 tsp salt


 

Method : Soak toovar dal in water for 15 minutes. Cut the potatoes into large pieces. Pressure cook dal with potato bits by adding sufficient water and ½ tsp salt for 8 minutes. Prepare seasoning in frying pan with mustard, chana dal and red chillies in oil. Add minced ginger and largely cut green chillies. Fry for a while. Then add haldi, asafoetida, tomato pieces and curry leaves. Fry for another few minutes. Put the cooked dal - potato mixture in the pan, add a little salt and cook for 3-5 minutes. Remove from flame. Stir in lemon juice and finely cut coriander leaves, before serving.


Indian Cooking Recipe : Potato Podimas

 

Ingredients : 1 pound potatoes ¼ tsp turmeric a small pinch hing 6 green chillies a small piece ginger, grated ½ tsp urad dal 1 tsp channa dal ¼ tsp mustard curry leaves a small bunch cilantro, washed and finely chopped 1 lemon 2 tsp cooking oil 1 tsp salt to taste


 

Method : Boil potatoes with turmeric and salt. Peel skin and mash them and keep aside. Heat some oil in a pan and put the mustard. When they crackle put urad dal, channa dal, hing, turmeric, curry leaves, red chillies, ginger, lemon juice, salt and the mashed potatoes. Allow it to cook for a few minutes. Garnish with cilantro.
